From Our Kitchens to Yours This family recipe for Cranberry Christmas Cake is a favorite of Blue Heron Jane Jenkins’s brother, Eric. Jane or one of his other three sisters always comes through for him and prepares the cake for their Christmas get-together.CRANBERRY CHRISTMAS CAKE Cake3 T butter 3 t baking powder 2 c flour 1/4 t salt 1 c sugar 3 c fresh cranberries 1 c milk Mix all ingredients except cranberries, then fold in cranberries. Spread batter evenly in an 8- or 9-inch cake or springform pan. Bake at 350 degrees for 35-40 minutes. Butter Sauce 1 c sugar 1/2 c half & half 1 T flour 1 t vanilla 1/2 c butter Mix flour and sugar. Put all ingredients except vanilla in saucepan. Heat, beating well, over high heat until bubbly. Add vanilla. Serve warm over cake. |
